An Internet project where I take photos of the food that I cook, and share the recipes that I am using. I am a busy person and don't have much time for cooking, so my meals are quick to prepare and fun!

All photos were taken by myself before eating the food shown (and believe me it was difficult to take good photos while feeling so hungry!).

 
Note: These dishes are not Atkins friendly - in fact, I personally believe that the Atkins diet is bad for your long-term health. Many of my coworkers, relatives, and friends who have tried the Atkins diet have experienced very serious and new health problems after coming off the Atkins diet. Think about it, what's more important to you: a temporary and sudden weight loss, or your long term health? The best way to have a healthy lifestyle is to eat balanced meals, and do some exercise every week! Try going for a walk or run, at least three times a week.

Spicy Fried Japanese Udon Noodles with Zucchini, Ham, Onion, and Peanuts

Spicy Fried Japanese Udon Noodles with Zucchini, Ham, Onion, and Peanuts

This is a surprisingly fast and easy dish that I just invented. You'll need a small package of Japanese Udon noodles - they come already hydrated and need refrigeration. First, sauté (on medium-high heat) some chopped onions in a frying pan with a bit of cooking oil. After the onions are partly cooked, add some cubed zucchini pieces to the pan, and a few peanuts (without the shells). Season with salt and pepper. Fry for about 2 minutes, stirring regularly, and then add some pre-cooked ham sandwich meat, and fry for one minute more. Now add the package of udon noodles, reduce heat to medium, and add a generous amount of Soya Sauce as well as your favorite hot sauce (to taste).  Fry, stirring regularly, until noodles start to turn golden brown color. Serve immediately, and consider adding a garnish of fresh cilantro.

Beef Tortellini with Tomato Sauce, Beans, Broccoli, and Mushrooms

Looks fancy, but is really easy. Just boil a package of fresh tortellini in a large pot of salted, boiling water. In a separate pot, steam some chopped beans and broccoli until just cooked (about 2 minutes). Heat some canned tomato sauce in a saucepan. When tortellini is tender (after about 8 minutes), drain and arrange on plate with tomato sauce on top, alongside the vegetables. Sprinkle with parmesan cheese and ground black pepper. You can put some washed, chopped, fresh mushrooms on top as well.

Fresh Spinach  Salad with Tomato and Mushroom

It's easy! Just get some fresh spinach leaves, trim the bottoms off the stems, and wash them under cold water. Wash and chop a fresh tomato into pieces, and you can remove the seeds if you don't like them, and add the tomato to the spinach in a bowl. Next, wash some fresh mushrooms and chop them, and throw them into the bowl too. Toss with your favorite dressing and serve.

Sacchettini Alfredo with Cauliflower and Spinach

 

 

This recipe is simplicity itself! Simply put fresh Sacchettini pasta into salted, boiling water, and boil until a-la-dente. At the same time, steam fresh cauliflower and washed fresh spinach leaves in separate pots. Drain pasta, add 1/2 jar of prepared Alfredo sauce, stir and heat over medium heat until bubbly. Arrange cauliflower and pasta on plate: sprinkle with grated parmesan and ground pepper. Place drained, wilted spinach leaves in separate bowl, and serve.

Preparation time: 20 minutes [June 5, 2004]

Shrimp and Zucchini Fettuccini 

Boil large pot of water and cook fresh pasta in water until done (do not overcook). Meanwhile, in a frying pan, sauté some fresh garlic and onions with a touch of cooking oil and a dash of salt (optional). Add some chopped zucchini and some frozen, pre-cooked shrimp to frying pan. Cover and let simmer until zucchini is soft. Add prepared pasta sauce to vegetable mixture, along with drained pasta. Heat until bubbly.

Preparation time: 20 minutes [April 19, 2004]

Chile on Toasted Bagel with Boiled Zuchinni and Brocolli

Put bagel in toaster and toast until crispy. Peel and boil vegetables in pot with water (no seasoning needed). Heat can of Stag Chile. Arrange on plate and serve.

Preparation time: 15 minutes. [March 16, 2004]

Perogy with Onion, Fresh Garlic and Cheese Sauce, with Boiled Carrots

Heat water and boil frozen perogies. Boil peeled and chopped carrots in water until soft. In frying pan, roast garlic in oil, adding a pinch of salt to taste. Add 1/2 onion, sautee for 2 minutes. Add chopped zucchini with 1/2 cup water and black pepper and herbs to taste. Cover and let simmer. Once perogies rise to top of water, drain. Put perogies in frying pan and fry for 2 minutes with vegetables, uncovered. Add 1 can of Campbell's Cheese Soup to vegetables in frying pan, and heat until bubbly.

Preparation time: 30 minutes. [March 15, 2004]

Sandwich with Black Forest Style Chicken, Mozzarella and Cheddar Cheese

Spread each slice of bread with mayonnaise on one side. Add slices of chicken, mozzarella and cheddar cheese. Apply mustard liberally. Cut diagonally and serve.

Preparation time: 10 minutes. [March 14, 2004]
