The Zhejiang style of cooking is renowned for its use of freshwater fish, bamboo shoots, and subtle, mellow flavours. Within Zhejiang cuisine, there are three distinct sub-styles, the most notable of which is specific to Hangzhou. You can therefore expect to enjoy many dishes of this particular style, whose signature style is tender, fresh and delicate.
