Gastrophysics: an emerging science

Synopsis

Professor Mouritsen’s research addresses basic science questions having applications in biotechnology, biomedicine, and gastronomy.  His publications cover a wide range of interests, from biophysics to gastrophysics. He is currently the principal investigator of a major Danish food science research project, ‘Taste for Life’. In addition to recognition for his outreach to the wider community and skills as a science communicator, Ole has just been awarded the prestigious DuPont prize for food science.
